Stir frying is a cooking technique which has long been used throughout South East Asia and is now very popular in Western cooking. This is partly because it is a quick and simple way to cook foods, ideally suited to people with busy lifestyles, but also because it is a very healthy form of cooking, during which meat, fish, rice and vegetables lose very few important minerals and vitamins. Stir frying involves cooking food very quickly in oil heated to a high temperature, with seasonings and optional sauces, stocks and wine. Since the amount of oil used in most stir fry recipes is minimal, it is a technique which could more properly be described as cooking with oil rather than cooking in oil.
